This is my favorite mushroom based dinner, and on the plus side my mushroom hating daughter loves it too!
Ingredients
- 2 cups of tortellini with cheese
- 1 Tbls of olive oil
- 1 cup of diced mushrooms
- 1 can of cream of mushroom
- 1 lb of ground turkey
- 1/4 onion (chopped)
- 1 Tbls of minced garlic
- 1 cup chopped cauliflower
Directions
Bring water to a boil in large pot. When water is boiling add tortellini and reduce heat to medium. Cook tortellini for 20 minutes or until tender, and drain water. In large frying pan with olive oil saute onion and garlic. Then add ground turkey and mushrooms to frying pan( you can add seasoning here if you want. I used Thyme, parsley, basil, and black pepper). Cook until turkey is browned. Add everything from the frying pan to pot of tortellini and mix in can of cream of mushroom. Cook on medium-low until warm. Enjoy! :)
